Beat in flour, baking powder, baking soda, and salt.
Chill dough for 2 hours or overnight.
Preheat oven to 375F/190C.
Roll the chilled dough into balls. Roll each ball in the cinnamon mixture.
Place on ungreased cookie sheet. Bake 8-10 minutes.

Freeze the dough up to 3 months or keep in the fridge for up to 4 days.Keep baked cookies on the counter for up to 7 days or freeze for up to 3 months.
